Creamy baked zucchini soup
Are you also a fan of zucchini soup? In summer, it belongs to the evergreens in every kitchen. However, try to prepare it differently - from roasted zucchini and garlic. You will be pleasantly surprised by its delicious taste.

Ingredients: 2 medium-sized zucchini, 6 cloves of garlic, 3 tablespoons of olive oil, salt, ground black pepper, crushed cumin, 750 ml of vegetable stock (bouillon), 2 tablespoons of butter, 100 ml of whipping cream.
Preparation:

Heat the oven to 180 °C.

Cut the washed zucchini into smaller cubes. Place baking paper on a baking sheet and scatter the chopped zucchini on it.

Add unpeeled garlic cloves, a little salt, pepper and ground cumin. Drizzle everything with oil and bake for 15 to 20 minutes.

In the meantime, heat the broth in a pot (prepare the broth) and pour the baked zucchini into it. Peel the roasted garlic and add it to the pot as well. Boil everything for a minute and blend the soup to a creamy consistency.

Finally, soften it with butter and a little cream. Garnish with freshly ground black pepper and a dollop of cream and serve with a toasted baguette.
